yeast application

This is our first time with this brand - Grand Cru, Heritage Estates, Vino Vida - Valpolicella. We received it as a gift. The directions state to sprinkle yeast on top of mixture - do not stir. The yeast packet itself says to mix with water. Which is it? do you sprinkle dry yeast on wine or sprinkle wet yeast mixture on wine?

You have listed three brands. The instruction sheet is shared between those three brands. In future please remember which box it was. In the case of this question, it doesn't matter.

The answer is that you can doi either. The yeast company recommends rehydrating the yeast because if done right it increases the yeast count at pitching. The kit company recommends not sprinkling because the rehydration is not done right by many people.

Personally, I just sprinkle the yeast and do not stir. I have done the rehydration routine (Grand Cru instructions many years ago specified rehydration) but I didn't notice any difference, and it's a nuisance step (sanitizing a measuring cup, getting water the right temperature etc) that I feel is unneeded.

BTW, pretty much every brand of kit calls for simply sprinkling the yeast on top.
