One of the most important elements to making great wine is ensuring it has ample time to age. Aging your wine will help the fruit and oak blend to form a complex bouquet. Aging can happen in an oak barrel to intensify the "toasty" characteristics of your wine or in the bottle to help develop flavours.
Making your kit now will ensure your wine reaches it's full potential for this year's Thanksgiving and Holiday season. Your wine will be aged to perfection and compliment your meal wonderfully. When gifting it will be ready to drink and your friends and family will not have to wait to enjoy your wine, because we all know that waiting is the hardest part!

To ensure proper aging here are some tips and guidelines to follow:
~ Ensure air is kept out of the bottle by storing your wine horizontally. This will keep the cork moist to avoid it from cracking or shrinking.
~ Store your wine at approximately 70% humidity. It is the ideal condition, not too dry so the cork won't dry out and not too moist which avoids mold from developing.
~ The ideal temperature for storing wine is 50 to 55°F (10-12°C). However, any constant temperature within 40-65°F (5-18°C) is acceptable.
~ Avoid vibrations. Try to store your wine in a place where it will not need to be moved constantly.
~ Keep your wine in a dark place to avoid light exposure.
