Cloudy after clearing

Posted by: orcaspirit, Monday, January 09, 2012

I'm doing a Grigio from juice but it's not completely clearing after the two pack clearing solution. It's my fault not being careful to rack it off the sediment so it's now cloudy. I've been told to clear it again or?

I'm no expert on wine from juice, but since this is a white, I have to wonder about protein haze. Did you use any bentonite in making this wine?

Thanks Steve but Dana at Spagnol's straitened me out. Apparently I should re-rack with half the two part with "just" the Kieselsol again that won't hurt the flavour. Making from juice is pretty pure so I try to not to put anything in if I can avoid it.

I used to use bentonite when I did kits. The haze is from my own sloppy work in racking of the sediment (which there isn't much) but thank you for your concern. I have two carboys going in the Grigio at the same time and one of them was perfect - almost ready to bottle. It's a space issue really for my on going production.
